Happy Independence Day thoughts
Wave the flag. Keep vigilant, 'cause that's the price of freedom, democracy, and all that; donate to the veterans' cause of your choice, and put a crimp in those ribbon-sticker companies' profits.
Fireworks: safety first! Unless there's no small children around, there've been multiple shots of Hank & Carol Anne's mystery punch consumed, and you're not afraid to be called Lefty for the rest of your life.
Lake Martin on the 4th: get outta the water! Alligators? Sharks? No, teenagers (and even younger kids) on Seadoos!
Like coconut? know anyone who does? This is a can't-miss:
Frozen Coconut Pie
1 package (3 ounces) cream cheese, softened
1 tablespoon sugar
1/2 cup milk
1 1/3 cups (about) flake coconut
1 tub (8 ounces) COOL WHIP Extra Creamy Whipped Topping, thawed
1/2 teaspoon vanilla
1 prepared graham cracker crumb crust (6 ounces)
1. BEAT cream cheese and sugar in large bowl. Gradually add milk; beat until smooth. Stir in coconut, whipped topping and vanilla. Spoon into crust.
2. FREEZE 4-8 hours or until firm. Garnish with toasted coconut and maraschino cherries, if desired. Or, let stand at room temperature 15 minutes or until pie can be cut easily; while it's warming, drizzle with melted chocolate, etc.
Store leftover pie (if any!) in freezer. Makes 8 servings.
